I am looking for some good dehydrated dinners that can be made great by the addition of a pouch of chicken, beef, salmon or tuna. Any ideas?

Backpackers pantry makes a Pesto Salmon pasta that is really really good.
It's expensive, but if you only are buying a few for one night on your trip, it's worth it.
Always cook them in a pot over the stove, like you would anything else. Don't do that "add water" thing, it's just a pain in the butt and something is always crunchy.

koors (lipton) parm. noodle. 7 oz. bagged tuna. plus cache lakes fp bread. my favorite meal of all time.

One cheapy meal that my group has always enjoyed is a box of kraft mac & cheese, two packets of tuna and a packet of kc masterpiece bbq. This makes a terrific lunch that you can make and be back on your way in 1/2 to 45 minutes. Feeds four a moderate sized meal.
Lotsa carbs plus some protein to get you to dinner. I like kanoes idea to cook in beer!

One thats a huge hit on my trips are tortilla pizzas soft shells pepperoni dried mushrooms pizza sauce Velveeta Mexican cheese dried olives minced dried onions soak mushrooms, and olives and saute Oil pan heat shells till they start to bubble, flip, add ingredients to 1/2 of shell. Fold shell over press edges creating a seal. Flip once more to heat other side and serve. On my 2006 trip the 8 of us ate 18 of these I thought I never would get to eat. These are best to eat as they come off the grill.
